za'atar as a prepared condiment is generally made with grinded dry thyme, oregano, marjoram, or some combination thereof, mixed with sesame seeds, and salt, though other spices such as sumac. There are numerous varieties of the “za'atar mix”.  Some are Turkish, Iranian, Lebanese, Jordanian… etc. however; it is wildly acknowledged that Palestinian Za'atar stands above the rest. It provides a specific strong, spicy, aromatic texture and dark green color. The secret is in the main ingredients and the way of preparation. Our Za'atar consists of handpicked wild oregano (Majorana syriaca), toasted baladi sesame seeds, wild sumac, and sea salt. The ingredients united in a special way and ratio give the Palestinian za'atar its unique aroma, taste, and color.
