Pickled cauliflower can be enjoyed on its own as a healthy snack or served alongside a variety of meats and main dishes. Even though the pickled cauliflowers are prepared the same traditional way like all other Palestinian pickles, this winter vegetable has a very distinctive taste profile when pickled. Unlike other pickles such as cucumber and turnips, cauliflower tends to “tolerate” the higher levels of salt and vinegar while being preserved and therefore remain much sweeter than other types of pickles. While some users may find pickles too salty or acidic, the cauliflower pickles are an exception to this idea.
